TIPS
Sprinkle some coconut sugar and cinnamon powder on your sliced apples and mix them well before you begin cooking the pancakes for even more flavour.

STORAGE
Store in the fridge for up to 4 days, or in the freezer for up to 3 months.
  • Our pancake, crêpes and waffle mix
  • 4 eggs (or a vegan alternative)
  • 2 tsp of vanilla extract
  • 200 ml of the milk of your choice
  • 3 apples
  • Coconut sugar
  • Cinnamon powder
  • Peel, core and thinly slice the apples. For each pancake, you will be using half an apple.
  • In a large bowl, whisk the eggs (or vegan alternative) and the vanilla.
  • Add the Good Mess pancake mix, and then the milk of your choice and mix.
  • Heat and grease a pan
  • Nicely arrange the slices of half an apple in the pan (you can place them in a circle for a great visual result)
  • Pour a ladle of batter over the apples to cover them. Cook for 3 min on the first side until the bottom is set and golden. Flip and cook for another 2 min on the other side.
  • Repeat the process until you use all the batter.
  • Sprinkle coconut sugar and cinnamon on top of the pancakes.
