- Peel, core and thinly slice the apples. For each pancake, you will be using half an apple.
- In a large bowl, whisk the eggs (or vegan alternative) and the vanilla.
- Add the Good Mess pancake mix, and then the milk of your choice and mix.
- Heat and grease a pan
- Nicely arrange the slices of half an apple in the pan (you can place them in a circle for a great visual result)
- Pour a ladle of batter over the apples to cover them. Cook for 3 min on the first side until the bottom is set and golden. Flip and cook for another 2 min on the other side.
- Repeat the process until you use all the batter.
- Sprinkle coconut sugar and cinnamon on top of the pancakes.
