- Preheat the oven to 170o C.
- Grease your muffin tin or line it with baking cups
- In a large bowl, mix the eggs (or vegan alternative) and the vanilla, then add the milk of your choice and mix again.
- Fold in any optional add-ins if you are using any; then pour the batter in the baking cups, filling them about 3/4 of the way.
- Sprinkle the top with more add-ins if using and bake for 25 min or until a toothpick comes out dry.
- Cool in the tin for about 5 min, then let them cool on a wire rack before digging in!
