Vegan Coconut Ice Cream

Our vegan coconut ice cream is super easy and only takes 5 minutes to prepare before popping it in the freezer. You only need 3 ingredients and you can make it even if you do not have an ice cream maker! Just follow the instructions below.

TIPS
Freeze the ice cream container that you plan on using 24 hours before making the recipe and pouring the ice cream mixture in – it will help the ice cream freeze faster.

STORAGE
2 MONTHS IN THE FREEZER
  • 1 can (14 oz or 400g) of full fat coconut milk
  • 1 can (14 oz or 400g) of coconut cream
  • ΒΌ cup of maple syrup

Optional

You can add a pinch of sea salt to the mix to really bring out the natural sweetness of the coconut

Method – if you do not have an ice cream maker:

  • Put all the ingredients in a blender and process until well combined.
  • Pour the mixture in a freezer-friendly container and place it in the freezer. You will need to take out the ice cream and vigorously stir it by hand every hour for about 3 times while it freezes. This will prevent hard crystals from forming and you will end up with a smoother ice cream.
  • To serve, remove the ice cream from the freezer and let it sit at room temperature for about 15 minutes before scooping and serving.

Method – if you have an ice cream maker:

  • Put all the ingredients in a blender and process until well combined.
  • Transfer the mixture to your ice cream maker bowl and churn according to the instructions.
  • Once done, transfer to a freezer safe container and freeze for at least 2 hours or until the desired consistency is reached. You can also freeze overnight to enjoy the next day.

Top-up this ice-cream with berries, coconut flakes, chopped nuts, chocolate chips or any of your favourite toppings, so you can enjoy different flavours every time.
