STORAGE
Up to 5 days in the fridge or store in the freezer for up to 3 months.
  • 1 pack of Good Mess pancake, crêpe and waffle mix
  • 4 eggs (or a vegan alternative)
  • 100 ml of the milk of your choice
  • 2 teaspoons of vanilla extract
  • 6 tbsps of olive oil, or melted coconut oil or butter
  • 200 ml of pumpkin purée
  • 1 tbsp of pumpkin spice (you can do it yourself by mixing 1/2 tsp of ground cinnamon, 1/4 tsp of ground nutmeg, 1/4 tsp of ground ginger, and 1/8 tsp of ground cloves).

  • In a large bowl, whisk the eggs (or vegan alternative) and the vanilla.
  • Add the milk of your choice and the oil mix well.
  • Add the pumpkin purée and pumpkin spices.
  • Add the Good Mess pancake, crêpe and waffle mix mix again.
  • Heat your waffle iron and brush it well with some oil.
  • Pour a ladle of batter in the centre of the waffle iron, spreading it just a bit before closing the iron.
  • Cook the waffles until they are golden and crisp.
  • Repeat until you finish your batter.
  • Serve them with the toppings of your choice, including maple syrup or honey, fresh berries, coconut whipped cream, or bananas.
